
We’ve now reached the middle of summer, and I can’t stop sharing recipes for perfect side dishes for summer get-togethers. Here is one more to add to your collection that is sure to be a crowd pleaser.
This recipe comes from an era when I was just out of college and working at my first job. I lived with others that were doing the same, and we enjoyed cooking for each other. My roommate at the time worked with a great group of ladies that were excellent cooks. One day she brought home a whole printed packet of recipes for great salads, and this recipe was one of those.
We made this recipe countless times for all types of occasions, and it was always a hit.



I hadn’t made this salad for years, and I came across it in a recipe binder recently. We were getting together with friends at the lake the following weekend, and I decided to give it a try once again.
When I served it, many of our friends went back for seconds, and they commented that it could be “the whole meal” instead of just a side. It has a little spice in the sauce, and the Doritos add a delicious crunchy texture.





This is the perfect recipe to make and share with others as a side dish or as the whole meal.

Serves 12
Salad:
1 head iceberg lettuce
2 tomatoes
1 small onion
Sauce:
1-2 lbs. ground beef
1 c. ketchup
1/2 c. mayo
1/4 c. taco sauce
1 t. oregano
1 t. chili powder
Topping:
1 bag Doritos
Chop lettuce and add to a large bowl. Dice tomatoes and onion and combine.
Brown ground beef, drain. Mix with ketchup, mayo, taco sauce, oregano and chili powder. Mix ground beef sauce with lettuce mixture.
Break up Doritos in the bag and combine. Serve immediately.
