With St. Patrick’s Day right around the corner, it’s the perfect time to create a festive treat that’s as fun to make as it is to eat. These bars are a St. Patrick’s Day twist on the classic Rice Krispie treats.

This bar recipe is truly over the top. It starts out with the classic gooey marshmallow and cereal combination, but the excess really happens when they get dipped in creamy almond bark.

This extra step not only adds a smooth, decadent finish, but it also provides the perfect surface for decorating with extra Lucky Charms marshmallows, making them festive and eye-catching.

This is a simple but impressive treat for a St. Patrick’s Day party, work event, or just a fun afternoon in the kitchen. They have the perfect balance of crunch, sweetness, and colorful charm, and they come together in just a few steps.

St. Patrick’s Day Bars

Makes 15 Bars

Ingredients:

  • 1/2 c. butter
  • 20 oz. mini marshmallows
  • 9 c. Lucky Charms cereal
  • 1 t. vanilla extract
  • 1/4 t. salt
  • 1 lb. almond bark

Directions:

  1. Set aside extra Lucky Charms marshmallows to decorate the bars later.
  2. Line a 9×13” pan with parchment paper and spray lightly with cooking spray.
  3. Melt the butter in a large pan over low heat. Add the mini marshmallows and stir until completely melted and smooth.
  4. Stir in the vanilla extract and salt.
  5. Remove from heat and gently fold in the Lucky Charms cereal until well coated.
  6. Press the mixture into the prepared pan and allow it to cool completely.
  7. Once set, remove from the pan and cut into 15 even bars.
  8. Melt the almond bark in a microwave-safe bowl in 30-second intervals, stirring in between, until fully melted and smooth.
  9. Dip one end of each bar into the melted almond bark and place on parchment or wax paper.
  10. While the almond bark is still wet, decorate with the reserved Lucky Charms marshmallows.
  11. Allow the almond bark to set completely before serving.
