
Every now and then, I stumble upon a recipe so simple that I feel the need to try it out. Quick Cherry Cake is exactly that kind of recipe.
I found it online and was intrigued by its short ingredient list: just a boxed cake mix, a can of pie filling, and a few eggs. It seemed almost too easy to be good, but it really was.
It is surprising how moist and flavorful the cake turned out, despite the minimal effort. The cherry pie filling adds little bursts of fruit throughout the cake, giving each bite a juicy, sweet burst. The texture is soft and light, and the overall flavor is perfectly balanced, especially when topped with a rich buttercream frosting.



The recipe was presented online as completely customizable. The version I tried used yellow cake mix and cherry pie filling, simply because cherry is my husband’s favorite pie flavor. But the original recipe encourages you to mix and match to your taste. The possibilities are endless; white cake mix with blueberry filling, chocolate cake mix with raspberry, or even a peach filling with spice cake. Next time, I’m thinking of pairing peach pie filling with white cake mix and topping it with a fluffy white frosting.

That said, this cake is also tasty without any frosting at all. If you prefer something a bit less sweet, serving it plain makes for a lovely coffee cake-style treat.

This dessert feels like a major upgrade to a classic cake mix, without requiring extra time or complex steps. It’s quick enough to make on a busy weeknight but tasty enough to bring to a gathering. When I shared it with my family, it didn’t last long.
