
Making a healthy breakfast for my family is always a goal of mine. Of course, it doesn’t always happen, but I love trying new recipes that help make it a reality.
One such recipe that turned out to be a big hit in our house is this Berry Yogurt Parfait. It’s a simple and delicious combination of creamy vanilla yogurt, fresh fruit, and homemade granola.



This was my first time making granola from scratch, and I was pleasantly surprised by how easy and delicious it was. The blend of old-fashioned oats, pecans, almonds, and sunflower kernels, lightly sweetened with brown sugar and honey, creates the perfect crunchy topping.



The fresh fruit can be customized with whatever is in season or your personal favorites—raspberries, blackberries, or even diced mango would work beautifully. My family enjoyed this parfait for breakfast, but really, it’s perfect for any time of the day.
The combination of creamy yogurt, sweet berries and crunchy granola makes this parfait satisfying and delightful. Each bite offers a contrast of textures and flavors that make it feel like a special treat, even though it’s packed with wholesome ingredients.

Serves 8
Granola:
2 c. old-fashioned oats
1/2 c. pecan halves
1/2 c. sliced almonds
1/4 c. sunflower kernels
1/2 c. packed brown sugar
1/2 t. salt
1/4 c. butter, cubed
1/4 c. honey
1/2 t. ground cinnamon
1 t. vanilla extract
1/2 c. dried cranberries
Parfaits:
2 c. fresh blueberries
2 c. fresh strawberries
4 c. vanilla yogurt
Instructions:
–Preheat the oven to 250°F. In a large bowl, combine the first six granola ingredients.
–In a small saucepan, mix butter, honey, and cinnamon. Cook over medium heat until blended, about 3-4 minutes. Remove from heat and stir in vanilla.
–Pour the mixture over the oat mixture and stir to coat.
–Spread evenly into a greased baking pan. Bake until crisp, about 35 minutes, stirring every 10 minutes.
–Cool completely, then stir in dried cranberries.
To assemble the parfaits, layer yogurt, berries, and granola in 8 single-serving jars or dishes. Repeat the layers as desired.
