In the kitchen with Kim: Retro Super Bowl Party Pizzas

The Super Bowl is the perfect excuse to gather with friends, enjoy good food and cheer on your favorite team. If you’re looking for an easy and nostalgic appetizer to serve during the big game, these Super Bowl Party Pizzas are just the thing!

I was introduced to this recipe when I met Dianne Lindbom from Kewanee at a Christmas brunch. As we chatted, she and our host, Linda, pulled out their favorite cookbook and pointed to two standout recipes. This was one of them, and after making it myself, I can see why!

These little pizzas have a bit of a retro feel. I remember snacking on something similar at gatherings when I was a kid in the 1980s. There’s something special about rediscovering an old favorite, and this recipe is a delicious blast from the past.

The key to these pizzas is cocktail rye bread. Pepperidge Farm once made a party-sized rye that was perfect for these, but it’s now discontinued. Fortunately, S. Rosen’s Party Cocktail Rye Bread is a great alternative and can be found in select grocery stores. Some stores also bake small loaves of caraway rye, which work just as well.

If you can’t find mini rye slices, you can cut regular-sized rye bread into smaller portions or use full slices for larger pizzas.

What makes these pizzas perfect for game day? They’re hearty, flavorful, and easy to prepare. You can even make them ahead of time and freeze them, so all you have to do is pop them in the oven when guests arrive. Whether you’re hosting a big crowd or just want a fun snack for the family, these mini pizzas are sure to please.

Super Bowl Party Pizzas

Feeds a crowd

Ingredients:

  • 1 lb. ground chuck
  • 1 egg
  • 3/4 pkg. dry onion soup mix
  • cocktail sliced rye bread
  • canned pizza sauce
  • 4 oz. grated mozzarella
  • Parmesan cheese

Instructions:

  1. Mix raw ground beef with onion soup mix and egg.
  2. Spread beef mixture onto rye bread slices.
  3. Top each with 1 teaspoon of pizza sauce and sprinkle with mozzarella cheese.
  4. Bake at 350°F for 15 minutes.
  5. Top with Parmesan cheese.

Make-Ahead Tip: These pizzas can be frozen! Arrange them in single layers on a cookie sheet, freeze, then transfer to freezer bags for easy storage. Just bake from frozen when ready to serve.
