When the weather turns frosty and cravings for hearty comfort food kick in, there’s nothing quite like a bowl of chili to satisfy everyone at the table. Over the years, I’ve perfected my recipe for “Perfect Chili,” and it has become a staple in my home.

I’ll admit, I used to make bland chili. Back then, I’d cautiously sprinkle in a dash of chili powder, and the result was…lackluster. Then, I discovered the magic of a full 1/4 cup of chili powder. It may sound bold but trust me—it transforms the dish into a richly flavored, crave-worthy dinner.

This chili isn’t just about the spice; it’s packed with veggies, beans, and hearty beef, making it a nutritious meal. The beans add protein and fiber, while the spices bring warmth and depth. For my spice-loving family, the level is just right. But if you prefer a milder chili, simply omit the cayenne and scale back on the chili powder. Want to turn up the heat? Add a splash of hot sauce or a pinch of chili flakes.

We love serving this chili with cornbread on the side, often sharing it with friends during cozy gatherings. Toppings like shredded cheese, sour cream, or diced avocado elevate the experience even more.

Perfect Chili

Serves 6-8

Ingredients:

  • 2 lbs. ground beef
  • 1 large onion, diced
  • 1/2 cup diced celery
  • 1/4 cup diced green pepper
  • 4 cups tomato juice
  • 29 oz. tomato puree
  • 15 oz. red beans
  • 15 oz. pinto beans
  • 1/4 cup chili powder
  • 1 tsp. cumin
  • 1 1/2 tsp. garlic powder
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. oregano
  • 1/2 tsp. sugar
  • 1/8 tsp. cayenne

Instructions:

  1. Brown ground beef with onion, celery, and green pepper. Drain grease.
  2. Add all remaining ingredients. Cook on the stovetop for 1–1 1/2 hours or in a slow cooker on low for 4 hours.
  3. Serve with your favorite chili toppings.

This chili is even better the next day and freezes beautifully, making it perfect for meal prep.
