
I made a salad this week that I’ve never made before, and it turned out to be a keeper.
This Country Pea Salad is simple, fresh and full of flavor. It would be a wonderful way to use homegrown garden peas, but since I didn’t grow any this year, I reached for frozen peas and was able to pull the salad together in just a few minutes.



This is one of those dishes I’ve enjoyed many times at potlucks. It’s refreshing, creamy and ideal for picnics or summer cookouts. The bright green peas paired with the salty cheddar, creamy eggs and tangy red onion make for a satisfying combination.
You can easily cut the recipe in half if you’re serving a smaller group. And if you want to add a little extra flavor, cooked and crumbled bacon is a delicious optional addition that blends beautifully with the other ingredients.

The salad is creamy without being too heavy and makes a nice change from the usual pasta or potato salads. It’s one of those dishes that people will ask for the recipe after they try it—and now you’ll have it ready to share.
