Recently, my son texted me a link to a video of someone making a Root Beer Float Pie. It was his not-so-subtle way of telling me that I needed to give it a try at our house.

I was happy to oblige, especially after seeing how simple it was to make. There is no baking involved, and it comes together in just a few minutes. The hardest part is waiting for it to freeze before you can dig in.

The root beer flavor really comes through in this pie and goes great with the creamy vanilla filling. It truly tastes like a root beer float. The graham cracker crust is a nice addition, and a little Reddi-wip on top makes it even better.

We really enjoyed this one. It’s cool, creamy and refreshing, and it’s an easy dessert to make ahead of time and keep in the freezer. With these hot summer days, that’s exactly the kind of recipe I like to make and enjoy.

My son had a good idea with this one. I’m glad I took the hint and gave it a try.

From our kitchen to yours — enjoy!

Root Beer Float Pie

Ingredients

  • 1 package instant vanilla pudding mix
  • 2/3 c. root beer
  • 1/2 c. milk
  • 1 t. vanilla extract
  • 1 tub whipped topping, thawed
  • 1 prepared graham cracker crust
  • Reddi-wip, for topping

Directions

–In a large bowl, whisk together pudding mix, root beer, milk and vanilla until smooth and slightly thickened. Gently fold in whipped topping until completely combined.

–Spoon mixture into graham cracker crust and spread evenly. Cover and freeze for at least 4 hours, or until firm.

–Remove pie from freezer about 10 minutes before serving to make slicing easier. Cut into slices and top each serving with Reddi-wip.

–Store leftover pie, covered, in the freezer.
