
Last weekend, I got together with a couple of friends for a fun meal-prepping session. We’ve found that dedicating a few hours to prepping food not only makes our weeks run more smoothly but also helps us (and our families) eat healthier.
One of the standout recipes we made was for Easy Egg Bites, inspired by the popular ones at Starbucks. These are the perfect grab-and-go breakfast, packed with protein and flavor.

We chose to make our egg bites with red peppers and spinach, but you can customize them with a variety of vegetables, meats, or even different cheeses to suit your taste. The base is a mixture of eggs and cottage cheese, which gives them a rich flavor without needing to add extra cheese.



One thing I learned during the process was that these egg bites love to stick to the muffin tins. Although the bites themselves came out beautifully, they left behind quite a mess. If you want to avoid a long cleanup, I recommend using silicone baking cups.



Even with the current high cost of eggs, this recipe is still worth a try. It uses a dozen eggs but yields an impressive 24 egg bites. If that sounds like too many, don’t worry—this recipe can easily be halved. I find that two egg bites make the perfect breakfast portion for me.
