Old-Fashioned Peanut Butter Cookies

Makes Around 20 Cookies

Ingredients:

  • 1/2 c. butter, room temperature
  • 1/2 c. sugar
  • 1/2 c. brown sugar, packed
  • 1 c. peanut butter
  • 1 egg
  • 1 t. vanilla extract
  • 3/4 t. baking powder
  • 1 1/2 c. flour

Instructions:

  1. Preheat the oven to 350°F.
  2. In a stand mixer, cream together the butter, sugar, and brown sugar until light and fluffy.
  3. Add peanut butter and mix until incorporated.
  4. Mix in the egg, vanilla extract, and baking powder.
  5. Slowly add the flour, mixing until a thick dough forms.
  6. Roll the dough into 1 1/4-inch balls and place them on a baking sheet.
  7. Flatten each cookie with a fork in a crisscross pattern.
  8. Bake for 10 minutes, then let them sit on the baking sheet for a few minutes to set.
