Hearty Italian Sausage Tortellini Soup
Serves 8
Ingredients:
1 lb. Italian sausage (casings removed)
1 – 32 oz. container chicken broth
1 – 28 oz. can petite diced tomatoes
2 – 10.5 oz. cans tomato soup
2 – 8 oz. containers chive and onion cream cheese spread (softened)
1 – 18 oz. package refrigerated cheese tortellini (uncooked)
Shredded cheddar cheese for garnish
Directions:
Brown Sausage: Start by browning the Italian sausage in a skillet over medium heat until it’s no longer pink.
Combine in the Slow Cooker: Transfer the cooked sausage to your slow cooker. Pour in the chicken broth, diced tomatoes, and tomato soup. Give it a gentle stir to combine all ingredients. Cover and cook on low for 6 to 8 hours.
Finish: About 30 minutes before serving, stir in the softened cream cheese and the uncooked cheese tortellini. Cover again, this time setting the cooker to high. Let it simmer for 15 to 30 minutes until the tortellini is tender and the soup is beautifully creamy. Garnish with shredded cheddar cheese, if desired.
