For my husband’s last birthday, instead of a cake, he requested a strawberry pie.

Although I’d enjoyed strawberry pie many times before, I had never made one myself. I stumbled across this simple recipe that made his request quick and easy. It turned out so well that I kept this recipe handy.

This isn’t exactly strawberry season, but last week my favorite store had strawberries on sale for $1.99 a pound. I grabbed two cartons and knew right away I’d be making this pie again.

In my mind, pie is usually reserved for special occasions. But this recipe is so simple that I was able to quickly make it on a Thursday night, and our family enjoyed it together after dinner. The dessert is light and refreshing with a buttery crust.

Juicy, bright strawberries are coated in a sweet glaze that enhances rather than overwhelms them. Add a dollop of whipped cream, and you’ve got a dessert that feels special without being complicated.

Using a refrigerated crust saves time without sacrificing flavor, so you can focus on the strawberries. Layered into a pre-baked crust and topped with a glossy glaze, they create a pie that’s as beautiful as it is delicious.

Easy Strawberry Pie

Serves 6–8

  • 1 refrigerated pie crust
  • ¾ c. sugar
  • 1 c. water
  • 2 T. cornstarch
  • 1 (3 oz.) box strawberry gelatin
  • 4 c. fresh strawberries, quartered

Bake pie crust according to package directions and let cool. In a saucepan, combine sugar, water, and cornstarch; cook until thickened. Stir in gelatin until dissolved. Arrange strawberries in the cooled crust. Pour glaze over berries and chill until set.
