
With the big football game right around the corner, I asked my husband the most important question of the season: What game-day snack do you want most? His answer was immediate: Classic Cheeseburger Dip. Honestly, it was a great pick. This dip checks every box for game day, parties, potlucks, or anytime you need a crowd-pleasing appetizer.

I made this dip for supper one night this week, and it was very well received. It only involved a few ingredients and came together in one pan. I served it with Fritos Scoops and tortilla chips, both of which were perfect. That said, there are plenty of other great pairing options. Pretzel bites, toasted baguette slices, or even fresh veggies would work well too.



The seasoned ground beef gives it heartiness, the Velveeta melts into a smooth, creamy base, and the Rotel adds just the right amount of tang and heat. It’s warm, satisfying, and sure to keep people hovering around the snack table.
This dip can be altered, too. Some choose to add diced jalapeños for extra heat. Some add cream cheese for extra creaminess, or a splash of milk if the dip is too thick. Another suggestion is to try Worcestershire sauce for more of a “burger” flavor.

Classic Cheeseburger Dip
Serves: 8–10
Ingredients
1 lb. ground beef
1 (16 oz.) package Velveeta cheese, cubed
1 (10 oz.) can Rotel diced tomatoes & green chiles, undrained
½ t. garlic powder
½ t. onion powder
¼ t. black pepper
Optional: ½ t. chili powder or smoked paprika (for extra depth)
Instructions
–Brown the beef
In a large skillet over medium heat, cook the ground beef until fully browned, breaking it up as it cooks. Drain excess grease.
–Season
Stir in garlic powder, onion powder, black pepper, and any optional spices. Let the beef cook for another 30 seconds so the seasonings bloom.
–Melt the cheese
Reduce heat to low. Add the cubed Velveeta to the skillet, stirring occasionally until melted and smooth.
–Add Rotel
Stir in the entire can of Rotel (juice included). Continue stirring until everything is fully combined and creamy.
–Serve warm
Transfer to a serving bowl or keep warm in a small slow cooker.
